Delicious Gluten Free Pancakes
I don't know where I first saw a similar recipe, but I have doctored it over the years & now I make them all the time. I make the blueberry with cinnamon (anti-inflammatory) and chocolate with peanut butter (protein with a chocolate pick me up) options often. We often make the base (eggs, bananas, quick oats, vanilla) in double or triple, then split it into 2-3 bowls. Then we mix different flavors in each bowl (maybe PB in one, then PB with no sugar added dark chocolate chips in the other; the PB only ones make an excellent caffeine free, clean, protein-based snack for just before bed or anytime in the evening).
Equipment:
-1 bowl (more if you split the recipe)
-pancake griddle & spatula
Ingredients:
(the first 4 ingredients make the base)
-2 bananas
-2 eggs (organic, grass-fed, or with added Omegas are best)
-1 tsp vanilla (I add a little more because I really like vanilla, I also make sure it's a high quality vanilla)
-3/4 cup of quick oats (I make sure I get a clean product; the only ingredient should be the oats)
*then decide what flavors you want to add in. Some options include:
-cinnamon & blueberry
-mixed berry with dash of powdered ginger
-peanut butter (or any nut butter)
-peanut butter with no sugar added dark chocolate chips
OR come up with your own flavor (using clean ingredients)
*I often add about 1/4 a cup of ground flaxseed to get in extra omegas, antioxidants & fiber
Directions:
1) In a mixing bowl, hand stir the first four ingredients until quick oats are fully absorbed & all the ingredients are well mixed together
2) Add in ingredients for the flavors you desire
3) Heat pancake griddle & cook just as you would regular pancakes (I heat just below medium and use a 1/3 cup scoop to scoop onto the griddle, flattening with the scoop to shape as a pancake). Once I see small bubbles rising through the pancake, I flip it)
Enjoy!

Thrive market
This fully online market carries non-perishables, frozen foods, supplements, & personal care items (no fresh foods or refrigerated items) that you can order by having a Thrive Membership ($60/yr or $12/mth when I posted this). I'll always keep it real with you- Thrive has pros and cons. The biggest pros are that I can find high quality, clean ingredient foods and supplements that I have difficulty finding anywhere else or they are less expensive on Thrive (Fody, Thrive Veggie Sticks, Beechers gluten free mac n cheese, Aloha Bars, Garden of Life Elderberry, and Thorne supplements are a few that stay in my regular orders). Delivery to my door is also nice. The negatives are that I still need to shop at my local grocery stores (and farmer's markets) to get the rest of my groceries, remembering to update my cart each month (thank you calendar reminders), and the fact that there is a membership fee. Also, frozen foods are considered a separate order & you have to meet a minimum order for frozen foods to be shipped.
A few ways to save money at Thrive- look for credit card reimbursements (for example, a couple times a year AmEx offers money back when you purchase a Thrive Membership on your AmEx card. Also, click here to go to Thrive Market and use my referral code to save 40% off your first order.
